For an extra fun look to this cocktail, try rimming your flute with gold sugar before assembling it.
Champagne Cocktail
you'll need 1 sugar cube, bitters, chilled cognac, and champagne...
In your flute, place one sugar cube and drench it with Angostura bitters. 
Add 1 ounce chilled Cognac (this may be kept in a cold place like a cooler, or chilled per cocktail).
Top with champagne.

Most people believe an old fashioned is a bourbon drink, however the most rudimentary definition states it must contain spirit, bitters, and sugar. That adds up to A LOT of possibilities!
Classic Old Fashioned
​2 ounces bourbon or rye
.25 ounces simple syrup (1:1)
1-2 dashes Angostura bitters
1-2 dashes Regan's orange bitters
Stir. Strain over large format ice.
Express oils from lemon across the top of the cocktail, making sure to rub oils around the rim and down the entire glass.

The Chareau-Off
1.5 ounces Absolut Elyx
.25 ounce Chareau Aloe Liqueur
​
2 ounces Topo Chico Mineral Water
​
2 ounces Prosecco
Add ingredients to mixing glass filled with ice. Turn ice 2-4 revolutions. Strain chilled ingredients into coupe. Using a long handled barspoon, pour 2 ounces of prosecco into the cocktail. Garnish with any fresh herb or dehydrated citrus wheel.

The New Mexico Sour is a riff on the very popular New York Sour but the change from bourbon tequila allows the spirit and the wine to shine in a completely new way!
New Mexico Sour
2 ounces Milagro reposado
1 ounce lemon juice
.75 ounce agave syrup
Shake. Strain over fresh ice.
Use barspoon to float .25 ounce red wine. Garnish with torched rosemary.

1 oz Patron Reposado
1 oz Patron Citronge Pineapple
3 oz Parks Coffee Cold Brew
Two Methods: 
for froth as shown in photo, shake ingredients and pour directly into glass.
for a more classic approach, simply pour the ingredients into a rocks glass over ice
Either way: top with Spaulding's Specialty Spices Calabrian Chile Sugar. Garnish with fresh pineapple, or dehydrated wheel as shown here.

2 ounces Reyka Vodka
2 ounces Parks Coffee Draught Nitro
.75 ounce Flower-Girl Syrup
.25 ounce Hershey's Syrup
Vigorously shake ingredients and strain into a coupe. Use a barspoon to scoop the foam onto the cocktail. Top with just a pinch of Spaulding's Specialty Spices Hickory Smoked Sea Salt.

1.5 ounces Xicaru Mezcal
1.5 ounces Glenmorangie Nector D'or
1 ounce pink grapefruit juice
.5 ounce Betty's turkish fig cordial
1-2 dashes Betty's habanero tincture
Stir. Strain into chilled glass. Garnish fresh pink grapefruit dusted with SSS Calabrian Chile Sugar and serve with chocolate pieces.

add sugar cube
soak the cube with 2-3 dashes Angostura bitters
top with champagne
garnish with lemon twist
*Some recipes call for Cognac. This should be added after the bitters and before the champagne.
