Where are you from?
Dallas, Texas, born and raised. East Dallas.
But really, where are you from?
Really? From Mexican decent. Both parents from Mexico. First child born in my family in the US.
What cocktail are you making today?
Maybe I should try the olive oil one...

Not quick to talk about himself, the bartender working the bar recommended that we shoot Jorge with his Maserati. Wait, he's got a Maserati? Of course we want to shoot that on a sunny day in Knox Park!

[the olive oil one] 2.5 ounces extra virgin olive oil washed vodka, .5 ounce Dolin Dry, .25 ounce Chareau Aloe Liqueur, 2 dashes Angostura Orange bitters. Stir, strain into chilled Nick & Nora. Garnish with lemon zest.
Who makes the best bar guest?
​Bar guest? Like, who makes the best bar guest? *shrugs shoulders* I guess it’s kind of an open-ended question. The best bar guest is someone who is here to have a good time, who’s not too critical and if they sit at the bar they want to be part of the experience with you. Someone who tries to relate with the bartender as well as the other guests.

Who is the non-bartender rendition of you?
*smiles* *looks away* I would say *sighs* that’s tough. What do other people say? Can’t tell me? I love what I do and working around bars is a huge part of what I do and who I am. When not at work I try to disconnect and be around friends – like anyone else. I try to keep an active lifestyle – like doing the bartender boxing thing and going to the gym.
Can you make me laugh?
Can I make you laugh? I look into your eyes and I make you laugh.
Can we do this again?
Love to. 


A consummate profession, he's garnered respect from both sides of the bar. He's quick to repeat a question back which means two things. He wants to make sure he's heard you correctly. And he's going to give a thoughtful answer. Humbly, he doesn't like to talk about himself much.  But if you can get him to open up you quickly realize that everything he has, he has because of hard work and determination; and because he's earned it.
